SWEET PEPPER WITH GINGER COULIS
INGREDIENTS
1 red pepper (seeded) 1 yellow pepper (seeded) ½ cup fresh ginger 1 cup low sodium chicken stock
| DIRECTIONS
1.Bring all ingredients to a boil and then simmer for 20 minutes. The peppers and ginger will become tender and the chicken stock will reduce.
2.Remove from heat and let semi-cool. Process until smooth.
Great on fish or as a stir-fry sauce.
