STUFFED SALMON-DILL CELERY
INGREDIENTS

6 stalks large celery, cut in thirds
12 oz. canned or poached salmon, skin and bones removed
1 cup Low-fat Friendship Cottage Cheese
2 Tbs. fresh dill, chopped
1 Tbs. lemon juice
2 Tbs. ketchup
1 Tbs. hot sauce




DIRECTIONS

1. Place cottage cheese, dill, lemon juice, ketchup and hot sauce in a food processor or blender. Blend until smooth.

2. Flake salmon with fork and fold into cottage cheese mixture

3. Scoop into celery and chill for 1 hour
Cut into serving size pieces and garnish with lemon wedges, romaine lettuce and fresh dill


Serving size: 2 pieces
Yield: 9 servings
