LITE’N UP LASAGNA ROLL-UPS
INGREDIENTS

12 lasagna noodles, cooked
6 chicken Italian sausage links (5 per pound), cooked
16 oz Low-fat 1% Friendship Cottage Cheese
2 egg whites
1 tsp. nutmeg
1 tsp. white pepper
1 tsp. salt (optional)
½ cup shredded part skim mozzarella
1/3 cup Parmesan cheese
10 oz bag fresh spinach, washed & steamed
16 oz spaghetti sauce, homemade or commercially prepared






DIRECTIONS

1.Mix cottage cheese, nutmeg, pepper, salt, mozzarella cheese, Parmesan cheese, and egg whites and set aside.

2.Lay out individual strips of lasagna onto a flat surface

3.Cut sausage in half

4.Spread approximately 1/3 cup of cottage cheese mixture over the lasagna noodles.

5.Top with a thin layer of cooked spinach

6.Place sausage half at one end of noodle and gently roll entire noodle. Secure with a toothpick.

7.Position in a baking dish. Cover with spaghetti sauce. Bake covered for ½ hour at 375 degrees.
