LITEN UP LASAGNA ROLL-UPS
INGREDIENTS
12 lasagna noodles, cooked 6 chicken Italian sausage links (5 per pound), cooked 16 oz Low-fat 1% Friendship Cottage Cheese 2 egg whites 1 tsp. nutmeg 1 tsp. white pepper 1 tsp. salt (optional) ½ cup shredded part skim mozzarella 1/3 cup Parmesan cheese 10 oz bag fresh spinach, washed & steamed 16 oz spaghetti sauce, homemade or commercially prepared
| DIRECTIONS
1.Mix cottage cheese, nutmeg, pepper, salt, mozzarella cheese, Parmesan cheese, and egg whites and set aside.
2.Lay out individual strips of lasagna onto a flat surface
3.Cut sausage in half
4.Spread approximately 1/3 cup of cottage cheese mixture over the lasagna noodles.
5.Top with a thin layer of cooked spinach
6.Place sausage half at one end of noodle and gently roll entire noodle. Secure with a toothpick.
7.Position in a baking dish. Cover with spaghetti sauce. Bake covered for ½ hour at 375 degrees.
