BUFFALO’S FAVORITE SKINS
INGREDIENTS

4 medium baking potatoes
Canola oil spray
4 slices turkey bacon
¾ cup (3 oz.) reduced fat, 50% Light Cabot Cheddar cheese (shredded)
½ cup plain non-fat Stonyfield Farm Yogurt
2 Tbs. fresh chopped chives (or scallion tops)
1 tsp. white pepper















DIRECTIONS

1. Wash and pat dry potatoes. Spray with oil. Prick with fork and bake for 1 hour at 400 degrees or until done

2. Cool for 10 minutes. Cut in half and scoop out insides leaving ¼ “ pulp in skin.

3. Arrange skins on baking sheet and spray inside with oil. Place it back into 400 degrees oven for 10 minutes or until crisp.

4. Microwave bacon according to directions (chop into small pieces).

5. Divide cheese in 8 shells and place back in 400 degrees oven for 8 minutes.

6. Finish by adding 1 Tbs. of yogurt on top and divide the bacon and chives evenly into the 8 shells. Dust with white pepper.
